Quick Homemade Pesto

I love pesto. It is rich in immune boosting compounds, vitamins, minerals and essential fats. It also makes a delicious accompaniment to anything from fish to pasta to quinoa.

Quick Homemade Pesto


  • 50g fresh basil leaves
  • 45g pine nuts
  • 2 garlic cloves, crushed
  • 240ml extra-virgin olive oil
  • salt and pepper to season


  1. With a hand blender, process the basil leaves, pine nuts and garlic to form a rough paste.
  2. Add the oil in a thin stream with the blender still running. This should make a thick paste.
  3. If it seems too dry, add a bit more oil.

    This is one of my favourite recipes.

    A lovely variation is also is Asian pesto.

    1 bunch fresh coriander (80g)
    1/3 cup roasted salted cashews
    2 cloves garlic
    2cm piece fresh ginger peeled
    1/2 cup peanut oil
    Salt and pepper, to taste

    Very good with shrimp and noodles.

    Hi Peter. Thanks for this. It sounds delicious. However, I would suggest swapping the roasted salted cashews for raw ones. One you roast nuts you destroy their essential fats (the good ones) – making them rancid. Once in this state they can cause inflammation in the body.
